El ácido cítrico se produce principalmente mediante procesos de fermentación de melaza de remolacha o caña de azúcar como materia prima, en el que se usa Aspergillus niger como molde preferido. Después de la fermentación, el ácido cítrico se separa del caldo por precipitación con cal o carbonato cálcico y filtración. El citrato de calcio se lava y luego se solubiliza con ácido sulfúrico para formar ácido cítrico crudo, mientras que el calcio se precipita como CaSO4 (yeso) y se filtra. Finalmente, el ácido cítrico crudo se decolora y desmineraliza para cumplir con los estándares de calidad alimentaria.
